Garlic Roasted Mushrooms

THESE ROASTED GARLIC MUSHROOMS ARE SO POPULAR. I WAS ASKED TO REPOST

Ingredients:

16 even-sized open cup mushrooms, stalks cut level

3 tbsp corn or vegetable oil

1/4 c unsalted butter, softened

3 cloves garlic, chopped very finely

2 tbsp fresh thyme, chopped

1 1/2 tbsp lemon juice

salt and freshly ground black pepper to taste

1/4 c fresh breadcrumbs


Directions:

Preheat the oven to 200C/400F/gas mark 6. Lightly fry the mushrooms, cap-side down, in hot oil for 20 seconds.

Arrange the mushrooms in a shallow roasting tin with the stalks facing upwards.

Mix together the butter, garlic, thyme, lemon juice and seasoning. Spoon a little garlic butter on to each mushroom, then lightly press the breadcrumbs on top. Either refrigerate for later use, or cook immediately in the oven for 10 minutes.

Ingredients

1 lb farfalle pasta
4 plum tomatoes (cut into 1 inch dice)
8 basil leaves (cut into chiffonade)
1 lemons juice
14 cup extra-virgin olive oil
3 tsps salt
1 leaf fresh basil (garnish)

Not bad

I'd call today, "not bad". Fog over the water this morning. We saw some migrating ducks in the channel today. Fortunately I pulled out my trusty bird book and identified them as Mergansers. They are so cool. 

Lunch with my folks, and now dinner at 600 in Bellefontaine, with friends. Yummmm

Foxy, foxy

So after all the crazy animal parades on my deck this week, what do we see on our street? A fox! As we drove out our street this morning on the way to work, there it was, a fox! Standing so still out in the field on the hill in the snow. Absolutely beautiful.

The parade

So in the past we have seen neighborhood cats, raccoons, etc parade around our deck after dark. The raccoons are especially comical. They will stop and look in at us, and are just generally nosey. Anyway, that hasn't happened for a month or so. Probably due to the winter weather.

The night before last we were watching tv, when hey, there is an animal on the deck. Is it another cat? It's stopping to look in. Maybe it's a squirrel. Now it's standing up on its hind legs....EARS! It's a friggin' rabbit! Why? And how did a rabbit get on the deck? On going saga, last night, a raccoon. I'm thinking spring is a comin'. That nosey rabbit, and then another nosey raccoon should be sleeping somewhere, shouldn't they?
