Awesome Spicy Peanut Brittle

2 cups sugar
1/3 cup corn syrup
1/4 cup unsalted butter
1 tsp. salt
1 tsp. cayenne pepper
1 tsp. baking soda
1 cup salted dry roasted peanuts

Spray a large sheet pan with nonstick cooking spray. In a large, heavy saucepan over medium heat, combine the sugar, syrup, butter, salt and pepper. Stir until the sugar dissolves. Clip a candy thermometer on the side of the pot and boil mixture without stirring until temp reaches 300. Immediately remove the pot from the heat. Sprinkle baking soda over the syrup and stir. The contents will bubble vigorously. Stir in peanuts. Quickly pour mixture evenly onto prepared sheet pan. Use a small spatula (sprayed with nonstick baking spray) while it is still warm. Cool completely and break into pieces.

It was yard clean up day at the Tree House. We raked, and raked, and raked to get all the nut shells and sticks out of the yard. Then came the burning, burning, burning, and smoldering smokey fire. Ugh I am so sore but it sure looks better :)

This wet weekend is the big boat show weekend at the lake. I have seen a lot of cars cruising around looking at houses. A great sign that spring is on it's way. But if you are not buying a house or a boat you can still rent the Treehouse for a few days of relaxation. Stay dry.

The tree carver is here. He has a couple of days in so far. Last week was extremely hot, but today is beautiful. It's coming along so nice, I can't wait to see it finished.

Sunday at the lake.....my grandchildren are coming over this afternoon. Kim and her guest will be leaving the Tree House and Shauna and her family will be coming in at 6:00. My 5 year old granddaughter, Destiny, loves to help me straighten up the Tree House for the next guests, so I guess she'll be helping. She is actually so much help; because she thinks it is HER cottage. LOL

Busy time

Our first renters of the summer are here right now. They will leave Thursday afternoon and the next comes in on Friday for the holiday weekend. It's supposed to be a beautiful weekend for them. I hope so. I'm getting pumped!

Oh yes, let the thunderstorms begin. As we rush home, drag in the new baby tomato plants, close windows, and get the dog in from the deck; the wind blows and the rain pounds down. Things just seem to twist in the air. Thunder and lightening in the spring on the lake. Love it!

Rain, rain for 2 days. Well, April has been really nice so I guess we had this coming. It's still dreary and boring. It is making things grow and bloom and boy is the grass green and, well, tall now.

We made a little trip to La Pizzeria for a pizza. Probably one of the best at the lake. Keep it in mind when you stay with us. It's a nice drive around the lake. And it's worth it.

The Tree Stump

You may have noticed a rather large tree stump in the earlier post of Tarry trimming tree branches. We had to take out a dead cherry tree and it left us with this tall stump. Now we have a opportunity to have something carved into it. But what? We have been thinking but just can't decide. What are your thoughts.

Went to the Moose tonight for Wing Night. Tarry had wings but I went for the chef salad. It was a beautiful night to sit outside on the deck and watch the boats across the water. Yes there is a good reason I'm here.

The Sights

We went to Cranberry's Resort for dinner tonight with Tarry's brother and his wife. If you have stayed at the Tree House you may have met them. They live right across the street. On the way we passed a clump of trees along Rt 117 with a very large bird. Oh WOW! Have you seen the eagle? Awesome and Huge! Justing sitting in the tree and giving us the feeling that he owned everything as far as he could see. It was like we were intruding on him. So cool.

The trees are budding out and the leaves are on the way. We are in a bit of a funk, the cherry tree had to be removed before it landed on the Treehouse. We left the tree stump at about 6-7 feet off the ground to have it carved into something fitting for the cottage. Now we are searching for the proper carvings to fit the house. Any ideas?

Thunder and Lightening

Yes! We have waited (not so patiently) for days like this. It looks to be a sunny, warm day. And right into the weekend. I think we'll have our "Grandrats Easter Egg Hunt" at the Tree House this year. Although Avery (only 1 month old) may not be participating, :) We will make her parents do that. No candy for you sweetie.

It's Happening

It's finally above freezing and I can see some dirt in certain areas. The squirrels, rabbits and birds sure seem to think something is happening. It's the first time we have seen the street in months. The email inquiries are starting to come in. That's a good sign that spring is coming!

We have some visitors at the Treehouse this Thanksgiving. They from out of state visiting relatives for the holidays. It is a good thing that we have a furnace and fireplace, looks like it will not stay warm long. So if you are having visitors, the Treehouse is a great cottage for them to stay at.

Hey, today I'm holding the drinks while my new owners build a deck. Yes! It's over the boathouse, way up high and the view is awesome! Soon they will finish the railing and stairs and I'm sure I'll get to go up there for the first party. I can't wait. Keep watching and I'll show you the view from up there.

The Traveling Cooler

Your cooler sends a big "Thanks" out to the person that left it behind last summer. "Traveling Cooler" enjoyed a great vacation with the neighbors and did a wonderful job of keeping their drinks cold. Most times I got to sit in the shade of a nearby tree as my new owners basked in the sun and sand. Sometimes I even got to hold their subs. My job was to keep them cold, but not soggy. I was rewarded for my good job with a promise of many boat trips this summer and possibly another vacation next year!

Maple Syrup Festival

Maple Syrup Festival - Held in conjunction with the Indian Lake State Park on March 21-22nd at the Indian Lake State Park Campground. The festival includes a wagon ride through the park to the tapping area for a tutorial on how maple syrup is extracted. Next, it's a stop at the Sugar Shack for a demonstration of the process by which sap is transformed into true maple syrup. While at the festival, enjoy a pancake and sausage breakfast prepared by Chamber members and volunteers. Maple syrup can be purchased from the ILDC booth.

Well we are having our first guests of 2009 this week. Had to do a run through and check all the essentials. Everything is fine and ready to go. You never know what's going to work after the 15 below zero temps. we had a few weeks ago. Sure would be nice if it was 75 and sunny though. Oh well that's not far away.

Besides being cold out and dark and ugly. The interest in the Tree House Cottage for the summer has started to show up in my email. I think people just thinking about summer helps them warm up and get through the dark process of winter. Can't wait until Dec 22nd the days start getting longer so we have more daylight. Oh, well that's enough for now.
